Roasted Lemon Broccoli Recipe. Delicious!

Ahh.. the best part of having a garden is eating what you grow. It looks better, tastes better, and even smells better simply because it was made with your blood sweat and tears. Or maybe it’s just because it’s just better. Anyhow, my mom grew broccoli for the first time this year and it was tasty and so pretty.

She made some for me last week and honestly all she did was toss it around in a pot for a few minutes with a squirt of lemon juice. It was still vivid green and the taste was just ahhh…. perfect!

I was inspired by her broccoli to come up with a recipe even better than hers. This is what I came up with… added butter. :)

Lemony Buttery Broccoli Goodness:
  • 1 head of broccoli, cut leaving the stems (you should have more than I do in the picture)
  • 2 tablespoons butter (or soy butter if you have milk problems)
  • 1 tablespoon of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper
Bring a pot of water to a boil, toss in your broccoli and cook for 2 minutes. Immediately transfer into an ice bath. This will help keep the colors vivid and stop the cooking process immediately.
For an ice bath, I just toss some ice in the colander and let them sit for a few minutes.

In a saute pan, melt the butter with the oil. The combination of the two will help prevent the butter from burning. Add the cooled broccoli into the saute pan and toss to coat evenly. Cook for another 3-4 minutes or until the broccoli is starting to become soft and is reheated.

Remove from the heat, add the lemon juice, salt and pepper to taste. Toss to coat. Serve immediately.
