Savory Loaded Twice Baked Sweet Potatoes

There is nothing more delicious than a loaded twice baked potato. Well, except chocolate, but that's different post. ;)

Most recipes for a baked sweet potato seem to be sweet with cinnamon or spicy with chipotle pepper, but I wanted something more like a traditional baked potato. You know-- something covered in bacon, oozing with creaminess and just the right amount of veggies to make me feel like it's might actually be healthy.

I'm going to tell you how easy it is to make a delicious savory baked sweet potato. I'm really excited to share this with you guys today!


What You Need
  • 2 medium sweet potatoes
  • 3 slices of bacon (turkey bacon is great if you want to trim out calories)
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of spinach, sautéed
  • 2-3 TBSP sour cream or greek yogurt (more is totally okay especially if you want it extra creamy) 
  • Salt and pepper to taste
  • Optional: cheese or egg
Preheat the oven to 350F

Cook your sweet potatoes in the oven for about an hour or until fork tender.

While they are cooking, prepare your "filling". Cook the bacon in a sauté pan over medium heat. Once they are done, put them on some paper towels to remove excess oil.

Cook the chopped onions in the bacon fat until they are almost translucent. Add the minced garlic and cook for about one minute more. Now add the spinach. Sauté the spinach over medium heat with the onion mixture. Once the spinach has wilted, remove from the heat.

Chop your bacon and add some into the spinach mixture, but reserve some of the crispiest pieces to put on the top of the sweet potato.

Once the potatoes have finished baking and cooled slightly, use a spoon to remove the insides of the potatoes. But careful to keep some of the filling near the "wall" of the potato so the sides don't completely collapse.

Put the insides of the potato in a bowl and either use a fork or a potato masher to squash the potatoes until there are no solid pieces left. Add the sour cream, spinach mixture, salt and pepper and stir to combine.

Refill the potatoes with the mixture and top them with the crispy bacon, and cheese if desired. Pop them back into the oven at 350F for 5-10 minutes to warm it up and melt the cheese.

This great as a side dish or even as a main dish. If you have left overs, this is great served with a fried egg on top for breakfast! Yummy!
